Description

A delicious and satisfying Chicken Avocado Melt Sandwich combines tender, seasoned chicken breasts with creamy avocado, melted cheese, and fresh vegetables, all nestled between toasted slices of your favorite bread and spread with a flavorful mayonnaise and Dijon mustard mix.

Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich Fillings

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced

Bread & Spreads

  • 4 slices bread (sourdough, ciabatta, or preferred choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • Butter or olive oil for grilling

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat. Cook chicken breasts for 6-7 minutes on each side until fully cooked and no longer pink inside. Remove from skillet and let rest a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set aside for assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard evenly on each slice of bread to add flavor to the sandwich base and top.
  4. Assemble the Sandwiches: On two slices of the prepared bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top. Cover each sandwich with the remaining bread slices, mayo side down.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place sandwiches in the pan and cook until bread is golden brown and cheese melts, about 3-4 minutes per side. Gently press with a spatula to ensure even melting of cheese.
  6. Serve: Remove sandwiches from skillet, allow to cool for a minute, then slice in half and serve warm for a comforting meal.

Notes

  • Use chicken breasts of similar thickness for even cooking.
  • Feel free to substitute bread and cheese types to your preference.
  • For extra flavor, add fresh herbs like basil or cilantro.
  • You can add a little lemon juice on avocado slices to keep them from browning.
  • If you prefer, use a panini press to grill the sandwiches evenly.
  • The sandwich is best served immediately while warm and melty.
