Instructions

  1. Preheat Oven: Preheat oven to 400°F (200°C) and lightly grease or line a baking sheet with parchment paper.
  2. Mix Ingredients: In a mixing bowl, combine the shredded zucchini, Parmesan cheese, breadcrumbs, garlic, egg, parsley, salt, and pepper. Stir until the mixture is well combined and holds together.
  3. Form Bites: Scoop out heaping tablespoon-sized portions and roll them into small balls or shape into patties. Place them evenly spaced on the prepared baking sheet.
  4. Bake: Lightly spray or drizzle the tops with olive oil. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy on the outside.

  • To remove excess moisture from the zucchini, place it in a clean kitchen towel and squeeze out as much liquid as possible.
