Ingredients
Scale
Cookie Cups
- 1 roll (16.5 oz) refrigerated sugar cookie dough
- 1/2 cup all-purpose flour
Cheesecake Filling
- 8 oz cream cheese, softened
- 1/3 cup sweetened condensed milk
- 1/4 cup key lime juice
- 1 teaspoon lime zest
- 1/2 teaspoon vanilla extract
Garnish
- Whipped cream
- Extra lime zest or lime slices
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin to ensure the cookie cups don’t stick during baking.
- Mix and Shape Dough: In a bowl, combine the refrigerated sugar cookie dough with the all-purpose flour until well blended. Divide the mixture into 12 equal portions, then roll each into a ball. Press each ball into the muffin cups, shaping them into cup forms to hold the filling later.
- Bake and Shape Cups: Bake the cookie cups for 10 to 12 minutes. Immediately after baking, gently press the centers down to maintain their cup-like shape. Then, allow them to cool completely to set.
- Prepare Cheesecake Filling: While the cookie cups cool, beat the softened cream cheese in a medium bowl until smooth. Add the sweetened condensed milk, key lime juice, lime zest, and vanilla extract. Mix until the filling is creamy and well combined.
- Fill Cookie Cups: Once the cookie cups have cooled, spoon or pipe the key lime cheesecake filling evenly into each cup.
- Chill the Cups: Place the filled cookie cups in the refrigerator to chill for at least 1 hour, allowing the cheesecake filling to set properly.
- Garnish and Serve: Before serving, top each cookie cup with whipped cream and garnish with extra lime zest or lime slices for an added burst of fresh flavor and visual appeal.
Notes
- Ensure the cookie cups are completely cool before adding the cheesecake filling to prevent melting.
- Use fresh key lime juice and zest for the best authentic flavor.
- For easier removal, you can line the muffin tin cups with paper liners, though directly greasing is sufficient.
- Chilling the cookie cups overnight enhances flavor and texture.
- These cookie cups can be stored covered in the refrigerator for up to 3 days.
