For the pasta:
- 8 ounces fettuccine or penne pasta
- Water for boiling
- Salt
For the chicken:
- 2 boneless skinless chicken breasts, sliced
- 2 tablespoons Cajun seasoning, divided
- 2 tablespoons olive oil
For the sauce:
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 red onion, sliced
- 2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 2 tablespoons chopped parsley, for garnish
Instructions
- Cook the pasta: Boil water in a large pot, add salt, and cook the pasta according to package instructions until al dente. Drain and set aside.
- Prepare the chicken: Season the sliced chicken with 1 tablespoon Cajun seasoning. In a skillet, heat olive oil over medium-high heat and cook the chicken until browned and cooked through. Remove from the pan and set aside.
- Make the sauce: In the same skillet, melt butter and sauté garlic. Add bell peppers and onion, cook until softened. Stir in heavy cream and remaining Cajun seasoning, simmer. Add Parmesan cheese and cook until the sauce thickens.
- Combine everything: Return the chicken to the pan, add cooked pasta, toss until coated. Season with salt and pepper. Serve hot, garnished with parsley.
