- 2 cups heavy cream
- 1 vanilla bean (or 2 teaspoons vanilla bean paste)
- 5 large egg yolks
- 1/2 cup granulated sugar, plus more for topping
- Pinch of salt
Instructions
- Preheat the oven: Preheat the oven to 325°F (160°C).
- Infuse cream: Heat cream and vanilla in a saucepan until steaming. Let vanilla infuse for 10–15 minutes.
- Prepare custard: Whisk yolks, sugar, and salt. Slowly pour in warm cream, whisking constantly. Strain custard.
- Bake: Divide custard into ramekins, place in a water bath, and bake for 35–40 minutes.
- Chill and caramelize: Cool, refrigerate for 4 hours, sprinkle sugar on top, caramelize with a torch, and serve.
Notes
- You can use vanilla extract as a substitute for the bean. A broiler can caramelize the sugar if a torch is unavailable.
- For optimal enjoyment, serve the crème brûlée chilled with a freshly caramelized topping.
