Description

Twice Baked Sweet Potatoes are a delicious side dish perfect for any occasion. Creamy sweet potato filling flavored with warm spices and topped with a crunchy pecan and brown sugar topping, these are sure to be a hit at your next meal.

Main Ingredients:

  • 4 medium sweet potatoes
  • 2 tablespoons unsalted butter
  • 1/4 cup plain Greek yogurt or sour cream
  • 2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt

Topping:

  • 1/4 cup chopped pecans
  • 2 tablespoons brown sugar
  • olive oil for brushing

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Bake sweet potatoes: Scrub the sweet potatoes, pierce with a fork, and bake for 45–50 minutes until tender. Let cool, then scoop out flesh into a bowl.
  3. Prepare filling: Add butter, Greek yogurt, maple syrup, cinnamon, nutmeg, and salt to the sweet potato flesh. Mash until smooth and spoon back into skins.
  4. Add topping: Mix pecans and brown sugar, sprinkle over filled sweet potatoes, and brush edges with olive oil.
  5. Bake again: Bake for 10–15 minutes until heated through and golden.
