Main Ingredients:
- 4 medium sweet potatoes
- 2 tablespoons unsalted butter
- 1/4 cup plain Greek yogurt or sour cream
- 2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
Topping:
- 1/4 cup chopped pecans
- 2 tablespoons brown sugar
- olive oil for brushing
Instructions
- Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Bake sweet potatoes: Scrub the sweet potatoes, pierce with a fork, and bake for 45–50 minutes until tender. Let cool, then scoop out flesh into a bowl.
- Prepare filling: Add butter, Greek yogurt, maple syrup, cinnamon, nutmeg, and salt to the sweet potato flesh. Mash until smooth and spoon back into skins.
- Add topping: Mix pecans and brown sugar, sprinkle over filled sweet potatoes, and brush edges with olive oil.
- Bake again: Bake for 10–15 minutes until heated through and golden.

- Top with mini marshmallows or extra maple syrup for a sweeter version.
