Description

A fresh and flavorful Tomato Bruschetta recipe featuring a vibrant mix of ripe tomatoes, red onion, garlic, and basil, drizzled with balsamic vinegar and olive oil, served on toasted baguette slices. Perfect as a light appetizer or snack.

Ingredients

Scale

Tomato Mixture

  • ½ small red onion, finely chopped
  • 8 medium tomatoes (about 500g), coarsely chopped and drained
  • 2-3 garlic cloves, crushed
  • 6-8 fresh basil leaves, finely chopped
  • 30ml balsamic vinegar
  • 60-80ml extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Bread

  • 1 baguette or ciabatta loaf, sliced
  • Extra olive oil for brushing bread slices

Instructions

  1. Prepare the Tomato Mixture: In a medium bowl, combine the coarsely chopped and drained tomatoes, finely chopped red onion, crushed garlic cloves, and chopped fresh basil leaves.
  2. Add Seasonings and Dressing: Drizzle the tomato mixture with 30ml balsamic vinegar and 60-80ml extra virgin olive oil. Stir well to combine all ingredients evenly.
  3. Season and Marinate: Season the mixture with salt and freshly ground black pepper to taste. Let it sit at room temperature for 10-15 minutes to allow flavors to meld.
  4. Preheat for Toasting: Preheat your oven to 375°F (190°C) or, if preferred, heat a grill pan over medium heat for toasting the bread slices.
  5. Prepare the Bread Slices: Lightly brush both sides of the baguette or ciabatta slices with olive oil to ensure crispiness and flavor during toasting.
  6. Toast the Bread: Place the bread slices in the oven and toast for 8-10 minutes until golden and crisp, or grill on the pan for 1-2 minutes per side until nicely charred and crisp.
  7. Assemble the Bruschetta: Spoon a generous amount of the tomato mixture onto each toasted bread slice, ensuring even coverage.
  8. Serve: Serve the bruschetta immediately, garnished with extra fresh basil leaves if desired for an added burst of flavor and color.

Notes

  • Drain the tomatoes well to prevent the bread from becoming soggy.
  • Use fresh, ripe tomatoes for the best flavor.
  • You can adjust balsamic vinegar and olive oil quantities according to taste preference.
  • Serve the bruschetta immediately for the best texture and freshness.
  • Optional: Rub the toasted bread with a garlic clove for extra flavor before adding the tomato mixture.
