Description

These Tofu and Vegetable Patties are a delicious and nutritious plant-based alternative to traditional burgers. Packed with protein and flavor, they are easy to make and perfect for a quick and satisfying meal.

Tofu and Vegetable Patties:

  • 1 (14-ounce) block firm tofu (pressed and crumbled)
  • 1 cup grated carrot
  • 1/2 cup finely chopped bell pepper
  • 1/2 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon nutritional yeast (optional)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 cup chopped fresh parsley or cilantro
  • 1/2 cup breadcrumbs (plus more as needed)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil for cooking

Instructions

  1. In a large bowl, combine the crumbled tofu, grated carrot, chopped bell pepper, onion, and garlic.
  2. Add the soy sauce, nutritional yeast (if using), paprika, cumin, parsley, breadcrumbs, salt, and pepper.

    Mix until well combined. If the mixture feels too wet, add more breadcrumbs a tablespoon at a time until it holds together.

  3. Shape into 6–8 patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook the patties for 4–5 minutes per side, or until golden brown and firm.

  6. Serve warm with your favorite sauce or in a sandwich.

Notes

  • These patties freeze well, both before and after cooking.
  • Try adding corn, peas, or chopped spinach for variety.
  • Serve with tahini sauce, yogurt dip, or inside burger buns for a hearty meal.
