- 1 pound ground chicken
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced

- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- 1/3 cup Thai sweet chili sauce
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/4 teaspoon red pepper flakes (optional)
- 1 head butter lettuce or romaine, leaves separated and washed
- Chopped peanuts and lime wedges for serving (optional)
Instructions
- Heat sesame oil: In a large skillet over medium heat, heat sesame oil. Add garlic and ginger, sauté for 1 minute.
- Cook chicken: Add ground chicken, cook for 5–7 minutes until fully cooked. Stir in shredded carrots and cook for another 2 minutes.
- Add sauces: Add Thai sweet chili sauce, soy sauce, rice vinegar, and red pepper flakes. Simmer for 1–2 minutes.
- Finish and serve: Remove from heat, stir in green onions and cilantro. Spoon chicken mixture into lettuce leaves, top with peanuts and lime. Serve immediately.

- For a lower-sugar option, use a homemade or reduced-sugar sweet chili sauce.
- Add water chestnuts or chopped red bell pepper for extra crunch.
