  • 1 pound ground chicken
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/3 cup Thai sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 head butter lettuce or romaine, leaves separated and washed
  • Chopped peanuts and lime wedges for serving (optional)

Instructions

  1. Heat sesame oil: In a large skillet over medium heat, heat sesame oil. Add garlic and ginger, sauté for 1 minute.
  2. Cook chicken: Add ground chicken, cook for 5–7 minutes until fully cooked. Stir in shredded carrots and cook for another 2 minutes.
  3. Add sauces: Add Thai sweet chili sauce, soy sauce, rice vinegar, and red pepper flakes. Simmer for 1–2 minutes.
  4. Finish and serve: Remove from heat, stir in green onions and cilantro. Spoon chicken mixture into lettuce leaves, top with peanuts and lime. Serve immediately.

  • For a lower-sugar option, use a homemade or reduced-sugar sweet chili sauce.
