Ingredients:

  • 8 ounces spaghetti
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (1-ounce) packet taco seasoning
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1/2 cup tomato sauce
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Chopped cilantro, diced tomatoes, sour cream, or sliced jalapeños for garnish (optional)

Instructions

  1. Cook the spaghetti: Cook the spaghetti according to package directions until al dente. Drain and set aside.
  2. Cook the beef: In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess fat if needed.
  3. Add seasonings: Stir in garlic and taco seasoning, cooking for 1 minute. Add diced tomatoes, tomato sauce, and water. Simmer for 5 minutes.
  4. Combine ingredients: Add cooked spaghetti to the skillet. Stir in half of the cheeses until melted.
  5. Finish and serve: Sprinkle remaining cheese on top. Cover and heat until cheese melts. Serve hot with optional garnishes.

Notes

  • For a spicier dish, use hot diced tomatoes or add crushed red pepper.
  • Ground turkey or plant-based crumbles can be used in place of beef.
