Description

This Taco Rice Skillet is a quick and flavorful one-pan meal that combines seasoned ground beef, rice, beans, corn, and cheese for a delicious Tex-Mex dinner.

  • 1 lb ground beef
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade taco spice blend)
  • 1 cup uncooked long-grain white rice
  • 1 can (14.5 oz) diced tomatoes with green chilies, undrained
  • 2 cups beef broth
  • Salt and pepper to taste
  • Additional:

  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn
  • 1½ cups shredded cheddar or Mexican blend cheese
  • Garnish:

  • Fresh cilantro and sliced jalapeños (optional)

Instructions

  1. Cook Ground Beef: In a skillet, cook the ground beef until browned. Add onion and garlic.
  2. Add Ingredients: Stir in taco seasoning, rice, tomatoes, and broth. Simmer until rice is tender.
  3. Finish Dish: Mix in beans and corn. Top with cheese, cover, and melt. Garnish and serve.

Notes

  • You can use ground turkey or chicken instead of beef.
  • Adjust cooking time and liquid if using brown rice.
  • Great with sour cream, avocado, or tortilla chips on top.
