Ingredients
Scale
Filling
- 1 cup mashed cooked sweet potato (about 1 medium)
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground ginger
- 1/4 teaspoon salt
- 1 egg
- 1/4 cup evaporated milk
- 1 teaspoon vanilla extract
Crust & Garnish
- 1 refrigerated pie crust (or homemade)
- Whipped cream for topping (optional)
- Chopped pecans or cinnamon sugar for garnish (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin to ensure the crusts don’t stick.
- Cut and Shape Crust: Roll out the refrigerated pie crust on a clean surface. Using a 2.5 to 3-inch cookie cutter or glass, cut out circles. Press each circle gently into the mini muffin cups, shaping them to form small pie shells.
- Make Filling: In a medium mixing bowl, combine the mashed cooked sweet potato, brown sugar, ground cinnamon, nutmeg, ginger, salt, egg, evaporated milk, and vanilla extract. Whisk thoroughly until the mixture is smooth and well incorporated.
- Fill Crusts: Spoon the sweet potato filling evenly into each prepared crust, filling them about three-quarters full to allow room for setting without overflow.
- Bake: Place the muffin tin in the oven and bake for 20 to 25 minutes, or until the pie crust is golden brown and the filling is set firmly.
- Cool and Garnish: Allow the bites to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely. Optionally, top with whipped cream and garnish with chopped pecans or a sprinkle of cinnamon sugar before serving.
