Description

This Sweet Potato, Feta & Caramelised Onion Tart is a delightful vegetarian main course that combines the sweetness of caramelized onions and tender sweet potatoes with the saltiness of feta cheese, all baked on a flaky puff pastry crust.

  • Red Onion Mixture:

  • 1 teaspoon balsamic vinegar
  • ½ teaspoon dried thyme
  • Feta Cheese:

  • ½ cup crumbled feta cheese
  • Egg Wash:

  • 1 egg (beaten, for egg wash)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Caramelize Onions: In a skillet, cook red onion in olive oil until soft. Add balsamic vinegar, thyme, salt, and pepper; cook for 2 minutes. Set aside.
  3. Prepare Pastry: Roll out puff pastry on a floured surface, transfer to baking sheet, score edges, and prick center.
  4. Assemble Tart: Spread caramelized onions inside the border. Arrange sweet potato slices over onions, sprinkle with feta, season, and brush edges with egg wash.
  5. Bake: Bake for 25-30 minutes until golden. Garnish with thyme.
  6. Serve: Slice and serve warm or at room temperature.
