Sugar Cookie Crust:

- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Colorful sprinkles for topping (optional)
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C) and line an 8×8-inch or 9×9-inch baking pan with parchment paper. Press the sugar cookie dough evenly into the bottom of the prepared pan to form the crust.
- Make the Cheesecake Filling: In a medium bowl, beat the cream cheese and sugar until smooth and creamy. Add the egg and vanilla extract, mixing until fully combined.
- Assemble and Bake: Pour the cheesecake mixture over the cookie dough layer and spread evenly. Bake for 30–35 minutes, or until the center is set and the edges are lightly golden.
- Cool and Chill: Let cool to room temperature, then refrigerate for at least 3 hours before slicing into bars. Add sprinkles on top before serving if desired.
