Instructions

  1. Prepare Strawberries: Rinse the strawberries thoroughly under cold running water to remove any dirt or residue. Quarter each strawberry for easier blending and set aside.
  2. Make Sugar Syrup: In a medium saucepan over medium-high heat, combine the water and granulated sugar. Stir constantly until the sugar is completely dissolved and the syrup just comes to a boil. Remove the saucepan from heat and allow the syrup to cool to room temperature.
  3. Mix Ingredients: In a large mixing bowl, combine the cooled sugar syrup with the lemon or lime juice. Add the prepared strawberries into the bowl and mix gently to distribute evenly.
  4. Blend Mixture: Transfer the strawberry mixture into a blender or food processor in batches to avoid overfilling. Blend until the mixture becomes completely smooth with no large pieces of fruit remaining.
  5. Freeze Sorbet: Pour the smooth strawberry puree into a freezer-safe airtight container. Place it in the freezer and freeze for at least 6 hours or overnight until the sorbet is firm and scoopable.

Notes

  • For a smoother texture, you may strain the blended mixture through a fine mesh sieve before freezing to remove seeds.
  • If using frozen strawberries, no need to thaw before blending, but be aware it might affect the texture slightly.
  • Add a tablespoon of vodka if you want a softer texture, as alcohol lowers the freezing point.
  • Use fresh lemon or lime juice for the best flavor and brightness.
