For the Rice Krispie Treats:
- 1/2 cup unsalted butter
- 1/2 cup light corn syrup
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 4 cups crispy rice cereal
For the Topping:
- 1 cup semi-sweet chocolate chips
- 1 cup creamy caramel bits or soft caramels (melted)
- 1 teaspoon vanilla extract
Instructions
- In a large saucepan over medium heat, melt the butter. Stir in the corn syrup, sugar, and salt. Bring to a gentle boil and cook for 1–2 minutes until the sugar dissolves.
- Remove from heat and immediately stir in the chocolate chips, melted caramel, and vanilla extract until smooth and well combined.
- Gently fold in the crispy rice cereal, stirring until evenly coated.
- Use a spoon or scoop to drop heaping tablespoons of the mixture onto a parchment-lined baking sheet. Flatten slightly to resemble classic Star Crunch shape.
- Let cool at room temperature for at least 30 minutes, or until set.
Notes
- For softer treats, reduce the amount of cereal slightly.
- You can also press the mixture into a greased 9×13-inch pan and cut into bars once cooled.
- Store in an airtight container for up to 5 days.
