Celebrate St. Patrick’s Day with this festive Shamrock Lasagna Dessert! Layers of chocolate cookie crust, creamy cheesecake, vanilla and pistachio pudding, and whipped topping, topped with shamrock sprinkles. A fun and colorful treat for the holiday.

Crust:
- 36 chocolate sandwich cookies, crushed (about 3 cups crumbs)
- 1/4 cup unsalted butter, melted
Cheesecake Layer:
- 8 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 2 tablespoons milk
- 1 cup whipped topping
Vanilla Pudding Layer:
- 3.4-ounce package instant vanilla pudding mix
- 1 1/2 cups cold milk
Pistachio Pudding Layer:
- 3.4-ounce package instant pistachio pudding mix
- 1 1/2 cups cold milk
Additional:
- Green food coloring (optional)
- Shamrock sprinkles or green sanding sugar for garnish
Instructions
- Prepare the Crust: Mix crushed cookies and melted butter. Press into the bottom of a 9×13-inch dish.
- Make the Cheesecake Layer: Beat cream cheese, sugar, and milk until smooth. Fold in 1 cup of whipped topping and spread over the crust.
- Create the Vanilla and Pistachio Layers: Prepare each pudding layer separately with milk. Tint the vanilla layer with green food coloring if desired. Spread over the cheesecake layer.
- Finish with Whipped Topping: Top with remaining whipped topping, spreading evenly. Garnish with shamrock sprinkles.
- Chill and Serve: Chill for at least 4 hours, then slice and enjoy!

- For a fun presentation, use a shamrock-shaped cookie cutter before serving.
