Instructions

Fill each pocket generously with the ricotta-spinach mixture. Secure the openings with toothpicks or kitchen twine if necessary to keep the filling inside during cooking.
  4. Sear Chicken: Heat the olive oil in an oven-safe skillet over medium-high heat. Place the stuffed chicken breasts in the skillet and sear each side for 2 to 3 minutes until golden brown. This locks in juices and adds color.
