Ravioli:

  • 1 package (20 ounces) refrigerated cheese ravioli

Alfredo Sauce:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 8 ounces cremini or button mushrooms, sliced
  • 4 cups fresh baby spinach
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • chopped fresh parsley for garnish

Instructions

  1. Cook the Ravioli: Boil salted water and cook ravioli per package instructions. Drain and set aside.
  2. Sauté Vegetables: In a skillet, sauté garlic and mushrooms until browned. Add spinach and cook until wilted. Set aside.
  3. Make Alfredo Sauce: Melt butter, whisk in flour, then slowly add cream. Stir in Parmesan, nutmeg, salt, and pepper until thickened.
  4. Combine and Serve: Mix mushrooms, spinach, and ravioli with Alfredo sauce. Serve warm, garnished with parsley.
