  • 4 large eggs
  • 4 slices sharp cheddar cheese
  • 4 breakfast sausage patties or slices of cooked bacon
  • 1 avocado, sliced

  • Salt and pepper to taste

For the Chipotle Sauce:

  • ¼ cup mayonnaise
  • 1–2 teaspoons chipotle in adobo, minced
  • ½ teaspoon lime juice
  • Pinch of garlic powder

Instructions

  1. Prepare the Chipotle Sauce: In a small bowl, mix together the mayonnaise, minced chipotle peppers, lime juice, and garlic powder to make the chipotle sauce. Set aside.
  2. Cook the Sausage/Bacon and Eggs: Heat a skillet over medium heat and cook the sausage patties until browned or reheat the bacon until crisp. Remove and set aside. Wipe the skillet clean if needed, then add butter or oil and cook the eggs to your desired doneness, seasoning with salt and pepper.
  3. Assemble the Sandwiches: Spread a generous layer of chipotle sauce on each toasted muffin half. Layer with avocado slices, a sausage patty or bacon, the cooked egg, and a slice of cheddar cheese. Top with the other muffin half and press gently. Serve warm.
