Chickpea Patties:

  • 1 (15-ounce) can chickpeas (drained and rinsed)
  • 1/4 cup breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 garlic cloves (minced)
  • 1 small jalapeño (seeded and finely chopped)
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. Pulse Chickpeas: In a food processor, pulse the chickpeas until mostly smooth but still slightly chunky.
  2. Mix Ingredients: Transfer chickpeas to a mixing bowl and stir in breadcrumbs, red onion, garlic, jalapeño, cilantro, lemon juice, cumin, paprika, cayenne, salt, pepper, and egg. Mix until fully combined.
  3. Form Patties: Shape the mixture into 6 small patties.
  4. Cook Patties: Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side until golden brown and crisp.
  5. Serve: Enjoy warm with a side salad, in a pita, or with dipping sauce.

Notes

  • For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water).
  • Patties can be made ahead and stored in the fridge for up to 3 days or frozen for up to 2 months.
