Chickpea Patties:
- 1 (15-ounce) can chickpeas (drained and rinsed)
- 1/4 cup breadcrumbs
- 1/4 cup finely chopped red onion
- 2 garlic cloves (minced)
- 1 small jalapeño (seeded and finely chopped)
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons olive oil (for cooking)
Instructions
- Pulse Chickpeas: In a food processor, pulse the chickpeas until mostly smooth but still slightly chunky.
- Mix Ingredients: Transfer chickpeas to a mixing bowl and stir in breadcrumbs, red onion, garlic, jalapeño, cilantro, lemon juice, cumin, paprika, cayenne, salt, pepper, and egg. Mix until fully combined.
- Form Patties: Shape the mixture into 6 small patties.
- Cook Patties: Heat olive oil in a skillet over medium heat. Cook patties for 3–4 minutes per side until golden brown and crisp.
- Serve: Enjoy warm with a side salad, in a pita, or with dipping sauce.
Notes
- For a vegan version, replace the egg with a flax egg (1 tablespoon ground flaxseed + 2.5 tablespoons water).
- Patties can be made ahead and stored in the fridge for up to 3 days or frozen for up to 2 months.
