Sushi Rice
- 2 cups cooked sushi rice
- 1/4 cup rice vinegar

Spam Glaze and Fry
- 1 can Spam sliced into 8 pieces
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons mirin
- 1 tablespoon vegetable oil
Assembly
- 2 sheets nori cut in half
- 2 tablespoons furikake seasoning (optional)
Instructions
- Prepare Seasoned Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked sushi rice, then set the rice aside to cool to room temperature.
- Fry Spam Slices: Heat vegetable oil in a skillet over medium heat. Add the Spam slices and pan-fry them until they are lightly browned on both sides, about 2-3 minutes per side.
- Make Glaze: In a small saucepan, combine soy sauce, brown sugar, and mirin. Simmer the mixture over low heat for 2 to 3 minutes until it thickens slightly.
- Coat Spam in Glaze: Add the fried Spam slices to the saucepan with the glaze, turning them to ensure each piece is evenly coated.
- Assemble Musubi: Place a half sheet of nori on a clean surface. Add a layer of the seasoned sushi rice in the center and press gently to form a base. Place one piece of glazed Spam on top of the rice, then sprinkle with furikake seasoning if using.
- Wrap Musubi: Carefully wrap the nori around the rice and Spam, pressing and sealing the edges with a small dab of water if necessary to secure the wrap.
- Repeat and Serve: Repeat the assembly steps with the remaining ingredients. Serve the Spam Musubi Sushi Wraps at room temperature as a tasty main course or snack.
