Peach Filling
- 8 cups fresh peaches, peeled and sliced (or 6 cups frozen peaches, thawed)
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon ground cinnamon

- 2 teaspoons lemon juice
- 1 tablespoon cornstarch

- 1/2 cup unsalted butter (1 stick)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the cobbler.
- Prepare Peach Mixture: In a large mixing bowl, combine the peaches, 1 cup granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir gently until the peaches are evenly coated. Set aside to allow the flavors to meld.
- Melt Butter: Place the butter in a 9×13-inch baking dish and put it in the oven until the butter is completely melted. Remove the dish carefully from the oven.
- Make Batter: In a medium bowl, mix together the flour, 1 cup granulated sugar, baking powder, and salt. Slowly add the milk while stirring, until the batter becomes smooth and lump-free.
- Layer Batter over Butter: Pour the batter evenly over the melted butter in the baking dish. Do not stir, as the butter will help create a crisp base.
- Add Peach Mixture: Spoon the peach mixture over the batter evenly, again without stirring. The batter will rise around the peaches forming a cobbler topping as it bakes.
- Bake: Bake in the preheated oven for 40 to 45 minutes, until the top is golden brown and the cobbler is fully set.
- Cool and Serve: Remove from the oven and let the cobbler cool slightly. Serve warm, optionally topped with a scoop of vanilla ice cream.
