Ingredients
Chuck Roast:
1 (3 to 4-pound) chuck roast
Seasoning Packets:
1 packet ranch dressing mix (about 1 ounce), 1 packet brown gravy mix (about 1 ounce), 1 packet Italian dressing mix (about 1 ounce)
Additional Ingredients:
1/2 cup water, 4 medium carrots (peeled and cut into chunks), 4 medium potatoes (peeled and quartered), 1 onion (sliced), 2 tablespoons olive oil
Instructions
- Prepare the Chuck Roast: Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 2–3 minutes per side.
- Layer the Vegetables: Place the carrots, potatoes, and onion in the bottom of the slow cooker. Lay the seared roast on top of the vegetables.
- Mix the Seasonings: In a small bowl, whisk together the ranch dressing mix, brown gravy mix, Italian dressing mix, and water until smooth. Pour the mixture over the roast and vegetables.
- Cook in the Slow Cooker: Cover and cook on low for 8 hours or on high for 4–5 hours, until the meat is fork-tender and the vegetables are cooked through.
- Serve: Remove roast and vegetables from the slow cooker and serve with the pan juices.
Notes
- For a thicker gravy, remove 1/2 cup of the cooking liquid and mix with 1 tablespoon of cornstarch. Return it to the slow cooker and stir until thickened.
- You can skip searing the meat to save time, but it adds more flavor.
