Description

This Slow Cooker Three Envelope Pot Roast recipe is a convenient and flavorful way to enjoy a hearty meal with tender meat and vegetables. Ingredients

Chuck Roast:

1 (3 to 4-pound) chuck roast

Seasoning Packets:

1 packet ranch dressing mix (about 1 ounce), 1 packet brown gravy mix (about 1 ounce), 1 packet Italian dressing mix (about 1 ounce)

Additional Ingredients:

1/2 cup water, 4 medium carrots (peeled and cut into chunks), 4 medium potatoes (peeled and quartered), 1 onion (sliced), 2 tablespoons olive oil


Instructions

  1. Prepare the Chuck Roast: Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 2–3 minutes per side.
  2. Layer the Vegetables: Place the carrots, potatoes, and onion in the bottom of the slow cooker. Lay the seared roast on top of the vegetables.
  3. Mix the Seasonings: In a small bowl, whisk together the ranch dressing mix, brown gravy mix, Italian dressing mix, and water until smooth. Pour the mixture over the roast and vegetables.
  4. Cook in the Slow Cooker: Cover and cook on low for 8 hours or on high for 4–5 hours, until the meat is fork-tender and the vegetables are cooked through.
  5. Serve: Remove roast and vegetables from the slow cooker and serve with the pan juices.

Notes

  • For a thicker gravy, remove 1/2 cup of the cooking liquid and mix with 1 tablespoon of cornstarch. Return it to the slow cooker and stir until thickened.
  • You can skip searing the meat to save time, but it adds more flavor.
