Ingredients
Scale
Chicken
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
Sauce
- 1/2 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 2 tablespoons sriracha or chili sauce (optional)
- 3 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1/2 cup chicken broth
Garnish and Serving
- 1/4 cup chopped green onions
- 2 tablespoons chopped peanuts for garnish
- Cooked rice or noodles for serving
Instructions
- Prepare the sauce: In a slow cooker, combine the peanut butter, soy sauce, honey, rice vinegar, sriracha (if using), minced garlic, grated fresh ginger, and chicken broth. Stir the mixture until smooth and fully combined to create a creamy peanut sauce.
- Add and coat the chicken: Place the boneless, skinless chicken breasts or thighs into the slow cooker. Spoon the peanut sauce over the chicken, ensuring each piece is well coated.
- Cook the chicken: Cover the slow cooker and cook on low for 4 to 5 hours or on high for 2 to 3 hours. Cook until the chicken is fully cooked through and tender enough to shred easily with a fork.
- Shred the chicken: Remove the chicken pieces from the slow cooker onto a plate. Use two forks to shred the chicken into bite-sized pieces, then return the shredded chicken back into the sauce in the slow cooker and stir to combine evenly.
- Serve and garnish: Serve the peanut chicken generously over cooked rice or noodles. Garnish with chopped green onions and chopped peanuts for added crunch and flavor.
Notes
- For a thicker sauce, remove the chicken after cooking, stir the sauce well, and simmer it on the stovetop for a few minutes before adding the chicken back in.
- You can substitute almond butter or cashew butter in place of peanut butter for a different nutty flavor or to accommodate allergies.
- Add steamed vegetables like broccoli or bell peppers to the slow cooker or serve on the side to create a complete, balanced meal.
