Description

This Slow Cooker Greek Chicken recipe is a delicious and easy Mediterranean-inspired dish that is bursting with flavor. Tender chicken cooked with onions, bell peppers, olives, and a zesty lemon-herb marinade, topped with feta and fresh parsley.

Chicken:

  • 2 pounds boneless, skinless chicken thighs or breasts

Vegetables:

  • 1 red onion, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • ½ cup kalamata olives, pitted

Marinade:

  • ¼ cup fresh lemon juice
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon crushed red pepper flakes (optional)

For Serving:

  • ½ cup crumbled feta cheese
  • fresh parsley, chopped, for garnish

Instructions

  1. Prepare Vegetables: Place the sliced onion, bell peppers, and olives in the bottom of the slow cooker.
  2. Cook Chicken: Lay the chicken over the vegetables.
  3. Make Marinade: In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, pepper, paprika, and red pepper flakes.
  4. Add Marinade: Pour the marinade over the chicken and vegetables.
  5. Cook: Cover and cook on low for 5-6 hours or on high for 2½-3 hours until chicken is tender.
  6. Serve: Sprinkle with feta and parsley before serving. Serve over rice, quinoa, or with warm pita bread.
