Description

This Slow Cooker Cowboy Casserole is a hearty and comforting dish that’s easy to make and perfect for busy weeknights. Layers of seasoned ground beef, beans, vegetables, and cheese are slow-cooked to perfection with a topping of crispy potatoes. A family favorite that’s sure to please!


Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Vegetable Mixture:

  • 1 (15-ounce) can diced tomatoes with juice
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can kidney or pinto beans, drained and rinsed
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

Potato Layer:

  • 4 cups frozen sliced potatoes or hash brown rounds

Instructions

  1. Brown Beef: In a skillet, cook ground beef and onion until beef is no longer pink. Add garlic, cook for 1 minute, then drain excess grease.
  2. Mix Ingredients: In a bowl, combine beef mixture with tomatoes, corn, beans, soup, milk, 1 cup cheese, chili powder, paprika, salt, and pepper.
  3. Layer: Grease slow cooker, layer half of the potatoes, add beef mixture, top with remaining potatoes.
  4. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours. In the last 30 minutes, sprinkle remaining cheese on top to melt.
  5. Serve: Enjoy warm!
