  • 1 ½ pounds flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil

For the Stir-Fry:

  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce (additional)
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • Cooked white rice, for serving

Instructions

  1. Marinate the Beef: In a medium bowl, toss the sliced steak with 2 tablespoons soy sauce and cornstarch. Let marinate for 10–15 minutes.
  2. Sear the Beef: In a large skillet or wok over high heat, heat 1 tablespoon vegetable oil. Add the beef in a single layer and sear for 2–3 minutes without moving, then stir-fry until browned and cooked through. Remove beef and set aside.
  3. Prepare the Stir-Fry: Add remaining oil to the skillet, then stir-fry the onions and bell peppers for 3–4 minutes until just tender. Add garlic and ginger and cook for another 30 seconds. Return the beef to the pan. Stir in oyster sauce, additional soy sauce, hoisin sauce, rice vinegar, sesame oil, and black pepper. Cook for 2 more minutes until everything is coated and heated through.
  4. Serve: Serve hot over white rice.

  • For extra heat, add crushed red pepper or sliced chilies.
  • Substitute tamari for soy sauce to make it gluten-free.
