Shrimp and Sauce

  • 1 lb shrimp, peeled and deveined
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1/2 tsp red pepper flakes (optional)

Topping and Garnish

  • 1 cup shredded mozzarella cheese
  • 1/2 cup panko breadcrumbs (optional)
  • 2 tbsp chopped fresh parsley


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni or penne pasta and cook until al dente, usually about 10-12 minutes. Drain the pasta and set aside.
  2. Prepare the Shrimp: Season the peeled and deveined shrimp with salt, pepper, and if desired, red pepper flakes. In a large skillet over medium heat, melt 2 tbsp of butter and sauté the shrimp until they turn pink and opaque, about 2 minutes per side. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce: In the same skillet, melt the remaining 2 tbsp of butter. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese and Italian seasoning. Season with salt and pepper to taste. Let the sauce thicken slightly, about 3-5 minutes.
  4. Combine: Add the cooked pasta and shrimp back into the skillet with the sauce. Toss everything together to ensure the pasta and shrimp are evenly coated with the creamy garlic sauce.
  5. Assemble and Bake: Preheat the oven to 375°F (190°C). Transfer the pasta mixture to an oven-safe baking dish.
