Main Ingredients:

  • 1 pound raw shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked long-grain rice
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup chicken broth
  • ½ cup shredded cheddar cheese
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C).
  2. Sauté Vegetables: In a skillet, sauté onion and bell pepper in olive oil until soft. Add garlic and cook briefly.
  3. Prepare Rice Mixture: Stir in uncooked rice and toast. Combine mushroom soup, chicken broth, paprika, salt, and pepper in a bowl.
  4. Assemble Casserole: Mix sautéed vegetables, shrimp, and half of the cheese with the rice mixture. Pour into a baking dish.
