Shrimp:
- 1 lb large shrimp, peeled and deveined
Asparagus:
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
Other Ingredients:
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp lemon zest
- 1/4 tsp red pepper flakes (optional)
- 1/4 tsp salt
- 1/4 tsp black pepper
- Chopped fresh parsley or grated Parmesan for garnish (optional)
Instructions
- Cook Asparagus: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the asparagus and cook for 3–4 minutes until just tender but still crisp. Remove and set aside.
- Cook Shrimp: Add the remaining olive oil to the skillet, then add minced garlic and cook for 30 seconds. Add shrimp, salt, pepper, and red pepper flakes. Sauté for 2–3 minutes per side until pink and cooked through.
- Combine: Return asparagus to the skillet, add lemon juice, zest, and toss together. Cook for an additional 1–2 minutes to heat through.
- Serve: Garnish with parsley or Parmesan and serve warm.
Notes
- Serve over rice, pasta, or quinoa for a complete meal.
- You can substitute green beans or snap peas for asparagus if desired.
