Meat Filling
- 1 lb pork shoulder, ground
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp cinnamon
- ½ tsp cloves
- ½ tsp nutmeg

Pastry & Topping
- 1 package (17.3 oz) puff pastry (2 sheets)
- 1 egg (for wash), beaten with 1 tbsp water
Instructions
- Sauté onion and garlic: In a large skillet over medium heat, cook the chopped onion and minced garlic until they become translucent, about 5 minutes, stirring occasionally to prevent burning.
- Cook the meat: Add the ground pork and beef to the skillet. Cook, stirring and breaking up the meat, until browned and fully cooked through.
- Season and simmer: Stir in cinnamon, cloves, nutmeg, salt, and pepper. Mix well to evenly distribute the spices. Lower the heat and simmer the mixture for 10 minutes, allowing flavors to meld and excess moisture to evaporate.
- Prepare the oven and pastry: Preheat the oven to 375°F (190°C). Roll out one sheet of puff pastry to fit into a pie dish, pressing it gently to fit the shape and cover the bottom and sides evenly.
- Assemble the pie: Spoon the meat mixture evenly into the lined pie dish. Cover the filling with the second sheet of puff pastry. Seal the edges by crimping them together to prevent filling from leaking out while baking.
- Apply egg wash and vent: Brush the top pastry layer with the beaten egg wash made with egg and water. Cut a few slits on the top to allow steam to escape during baking.
- Bake the tourtière: Place the pie in the preheated oven and bake for 30 to 35 minutes, or until the puff pastry is golden brown and flaky.
- Rest and serve: Remove from oven and allow the tourtière to cool slightly before slicing and serving to ensure the filling sets a bit for clean slices.
