Ingredients

Italian Sausage:

1 lb, casings removed

Olive Oil:

1 tbsp

Onion:

1 medium, chopped

Garlic:

3 cloves, minced

Chicken Broth:

4 cups

Water:

2 cups

Potatoes:

1 lb, diced

Dried Thyme:

1/2 tsp

Dried Oregano:

1/2 tsp

Crushed Red Pepper Flakes (optional):

1/4 tsp

Spinach:

3 cups, roughly chopped

Heavy Cream:

1/2 cup

Salt and Pepper:

to taste


Instructions

  1. Cook Sausage: In a large pot, brown sausage in olive oil. Remove and set aside.
  2. Sauté Aromatics: Sauté onion, then add garlic.
  3. Add Ingredients: Pour in broth, water, potatoes, herbs, and red pepper flakes. Simmer until potatoes are tender.
