  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup water
  • 1 ½ pounds gold potatoes, diced (skin on or off)
  • 1 cup heavy cream
  • 2 cups chopped kale or spinach
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • grated Parmesan cheese for serving

Instructions

  1. Cook the Sausage: In a large pot or Dutch oven, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it up with a spoon, about 6–8 minutes.
  2. Saute Onion and Garlic: Remove excess grease if needed, then add the diced onion and cook until softened, about 3–4 minutes. Stir in minced garlic and cook for an additional minute.
  3. Add Potatoes and Broth: Add the diced potatoes, chicken broth, water, salt, pepper, and red pepper flakes if using. Bring to a boil, then simmer uncovered for 15–20 minutes until potatoes are tender.
  4. Finish the Soup: Stir in heavy cream and chopped kale. Simmer for another 5 minutes until greens are wilted and soup is heated through. Adjust seasoning if needed.
  5. Serve: Serve hot, topped with Parmesan cheese.
