Description

Roasted Veggie Delight is a vibrant and healthy side dish featuring a colorful medley of zucchini, yellow squash, bell pepper, cherry tomatoes, red onion, and carrots. Tossed in olive oil and fragrant herbs, then roasted to tender perfection, this dish offers a deliciously caramelized flavor that pairs wonderfully with grains like quinoa, rice, or pasta.

Ingredients

Scale

Vegetables

  • 1 medium zucchini, sliced
  • 1 medium yellow squash, sliced
  • 1 bell pepper (any color), chopped
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, sliced
  • 1 cup carrots, sliced

Seasoning & Oil

  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Optional Garnish

  • 1 tbsp fresh parsley or basil, chopped

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare the Veggies: Wash all vegetables thoroughly. Slice the zucchini, yellow squash, and carrots evenly. Chop the bell pepper and slice the red onion. Halve the cherry tomatoes to release their juices during roasting.
  3. Toss the Veggies: In a large bowl, combine all the prepared vegetables. Drizzle with olive oil, then sprinkle dried oregano, dried thyme, garlic powder, salt, and pepper. Toss everything until the vegetables are evenly coated with the seasoning and oil.
  4. Roast the Vegetables: Spread the seasoned vegetables in a single, even layer on the prepared baking sheet to ensure proper roasting.
  5. Roast for 20-25 minutes: Place the baking sheet in the preheated oven and roast for 20 to 25 minutes, stirring halfway through roasting to allow for even caramelization and tender texture.
  6. Serve: Remove the vegetables from the oven once tender and slightly caramelized. Let them cool slightly, then garnish with fresh chopped parsley or basil if desired. Serve immediately as a flavorful side dish or atop quinoa, rice, or pasta for a wholesome meal.

Notes

  • You can use any color bell pepper based on your preference or what you have available.
  • For extra flavor, consider adding a squeeze of fresh lemon juice or a sprinkle of Parmesan cheese before serving.
  • Make sure to spread the vegetables evenly on the baking sheet for uniform roasting and caramelization.
  • This dish is great for meal prep and can be stored in an airtight container in the refrigerator for up to 3 days.
  • Feel free to substitute or add other vegetables like mushrooms, asparagus, or eggplant depending on the season.
