For the Bruschetta
- 1 baguette (sliced into 1/2-inch pieces)
- 2 tablespoons olive oil (plus more for brushing)
- 1 cup roasted red peppers (jarred or homemade, finely chopped)
- 1/2 cup crumbled feta cheese
- 1 garlic clove (minced)
- 1 tablespoon fresh parsley (chopped)
- 1 teaspoon balsamic vinegar
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to prepare it for toasting the baguette slices evenly.
- Toast the Baguette Slices: Arrange the sliced baguette pieces on a baking sheet and brush them lightly with olive oil to ensure crispiness and flavor. Toast them in the oven for 8–10 minutes, or until they turn golden brown and crisp.
- Prepare the Topping: While the bread is toasting, combine the finely chopped roasted red peppers, crumbled feta cheese, minced garlic, chopped fresh parsley, balsamic vinegar, black pepper, and 2 tablespoons of olive oil in a small mixing bowl. Stir well to blend all the flavors together. Season the mixture with salt to taste.
- Assemble the Bruschetta: Once the baguette slices are toasted to perfection, generously spoon the red pepper and feta mixture onto each slice, distributing evenly.
- Serve: Serve the bruschetta warm or at room temperature as a delightful appetizer or snack at your next gathering.
