Potatoes:
- 2 pounds russet or Yukon gold potatoes, peeled and cut into chunks
Roasted Garlic:
- 1 whole head garlic
- 2 tablespoons olive oil
Mashed Potatoes:
- 1/2 cup unsalted butter, softened
- 1/2 cup whole milk, warmed
- 1/4 cup heavy cream, warmed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh chives, chopped (optional)
Instructions
- Preheat the oven: To 400°F. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden.
- Cook Potatoes: Place potatoes in a pot, cover with salted water, and boil for 15-20 minutes until tender. Drain well.
- Prepare Mashed Potatoes: Squeeze roasted garlic into a mixing bowl, add potatoes, butter, milk, cream, salt, and pepper. Mash until smooth. Adjust consistency with milk. Garnish with chives.
- Serve: Transfer to a bowl and serve warm.

- For extra flavor, use chicken broth instead of half the milk.
