Mashed Potatoes:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk, warmed
  • 1/4 cup heavy cream, warmed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, chopped (optional)

Instructions

  1. Preheat the oven: To 400°F. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until soft and golden.
  2. Cook Potatoes: Place potatoes in a pot, cover with salted water, and boil for 15-20 minutes until tender. Drain well.
  3. Prepare Mashed Potatoes: Squeeze roasted garlic into a mixing bowl, add potatoes, butter, milk, cream, salt, and pepper. Mash until smooth. Adjust consistency with milk. Garnish with chives.
  4. Serve: Transfer to a bowl and serve warm.
