Raspberry Sorbet:

Instructions
- Prepare Simple Syrup: In a small saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved to make a simple syrup. Remove from heat and let cool to room temperature.
- Blend Raspberry Mixture: In a blender or food processor, purée the raspberries with the lemon juice and cooled syrup until smooth. Strain the mixture through a fine mesh sieve to remove the seeds. Stir in the chopped fresh mint.
- Churn Sorbet: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes.
- Freeze Sorbet: Transfer the sorbet to a freezer-safe container and freeze for at least 2 hours, or until firm.
- Serve: Scoop into bowls and garnish with fresh mint leaves if desired.

- If you don’t have an ice cream maker, pour the mixture into a shallow dish, freeze, and stir every 30 minutes until smooth and frozen.
