Raspberry Sorbet:

Instructions

  1. Prepare Simple Syrup: In a small saucepan, combine sugar and water. Heat over medium heat, stirring until the sugar is fully dissolved to make a simple syrup. Remove from heat and let cool to room temperature.
  2. Blend Raspberry Mixture: In a blender or food processor, purée the raspberries with the lemon juice and cooled syrup until smooth. Strain the mixture through a fine mesh sieve to remove the seeds. Stir in the chopped fresh mint.
  3. Churn Sorbet: Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually 20–25 minutes.
