  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • 1/3 cup mini chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together peanut butter, honey, eggs, and vanilla extract until smooth.
  3. Add Dry Ingredients: Add protein powder, baking soda, and salt, and stir until fully incorporated.
  4. Combine and Bake: Fold in the oats and chocolate chips or nuts if using. Scoop the dough into tablespoon-sized portions on the baking sheet, flatten slightly, and bake for 8–10 minutes until golden.
  5. Cool and Serve: Let cookies cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
