Instructions

  1. Prepare Vegetables: Peel and dice the potatoes, peel and slice the carrots, chop the onion, and mince the garlic thoroughly to ensure even cooking and flavor distribution.
  2. Cook Vegetables: In a large pot, combine the diced potatoes, sliced carrots, chopped onion, and minced garlic. Pour in the 4 cups of chicken or vegetable broth and bring the mixture to a rolling boil. Add the optional diced kielbasa if you prefer a meatier soup.
  3. Simmer: Once boiling, reduce the heat to low and allow the soup to simmer gently for 20 to 25 minutes, or until all the vegetables are tender, absorbing the flavors fully.
