Description

These Pizza Enchiladas are a fun and easy twist on classic enchiladas using your favorite pizza fillings wrapped in flour tortillas, topped with pizza sauce and melted mozzarella cheese. Perfect for a quick weeknight dinner or a crowd-pleasing appetizer.

  • 6 slices flour tortillas
  • 2 cups shredded mozzarella cheese, divided
  • 8 oz pizza sauce, divided
  • 1 tsp garlic salt (optional)
  • Pizza fillings of your choice (such as sausage, pepperoni, mushrooms, etc.)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure even baking of the enchiladas.
  2. Prepare Baking Dish: Grease a 9×13-inch baking dish to prevent sticking and help with easy cleanup.
  3. Layer Sauce: Pour half of the pizza sauce evenly into the bottom of the prepared baking dish.
  4. Add Garlic Salt: Sprinkle garlic salt over the pizza sauce if desired, to add extra flavor.
  5. Fill Tortillas: Take one flour tortilla and place a handful of shredded mozzarella cheese in the center, then add your favorite pizza toppings on top of the cheese.
  6. Roll Tortillas: Roll the tortilla tightly with the fillings inside and place it seam-side down into the baking dish to keep it closed during baking.
  7. Repeat Process: Repeat the filling and rolling process for all remaining tortillas, cheese, and toppings.
  8. Add Remaining Sauce: Pour the remaining pizza sauce over the top of the rolled tortillas, covering them evenly.
  9. Top with Cheese: Sprinkle the reserved 1/2 cup of shredded mozzarella cheese evenly over the top of the sauced tortillas.
  10. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the cheese is melted, bubbly, and has golden brown spots.
