Description

This Pioneer Woman Pumpkin Chili is a hearty and flavorful dish perfect for chilly fall days. Packed with savory sausage, aromatic spices, and creamy pumpkin, it’s a comforting meal that will warm you from the inside out.

Ingredients

Scale

Main Ingredients:

  • 1 tablespoon olive oil
  • 1 pound ground spicy Italian sausage
  • 1 medium onion (chopped)
  • 1 red bell pepper (chopped)
  • 3 cloves garlic (minced)

Spices and Seasonings:

  • 2 teaspoons ground cumin
  • 1 ½ tablespoons chili powder
  • ½ teaspoon ground cinnamon
  • 1 teaspoon kosher salt (plus more to taste)
  • ¾ teaspoon ground black pepper

Additional Ingredients:

  • 2 cans (15 ounces each) fire-roasted diced tomatoes (with juices)
  • 1 can (15 ounces) kidney beans (drained and rinsed)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 can (15 ounces) pumpkin puree
  • 2 ½ cups chicken broth
  • Optional toppings: sour cream, shredded sharp cheddar cheese, roasted pumpkin seeds, avocado slices

Instructions

  1. Brown the Sausage: Heat olive oil in a large Dutch oven over medium heat. Add the sausage and cook until browned and cooked through. Drain on a paper towel-lined plate.
  2. Sauté Vegetables: In the same pot, sauté onion and bell pepper until softened. Add garlic, cumin, chili powder, cinnamon, salt, and black pepper; cook until fragrant.
  3. Add Ingredients: Stir in tomatoes, beans, pumpkin, broth, and cooked sausage. Bring to a boil, then simmer covered for 20 minutes.
  4. Adjust Seasoning: Taste and adjust salt and pepper. Serve hot with toppings.

Notes

  • For a vegetarian version, omit the sausage and add extra beans or a plant-based alternative.
  • The chili tastes better the next day as flavors meld.
