- 1 can (15 ounces) kidney beans (drained and rinsed)
- 1 can (15 ounces) black beans (drained and rinsed)
- 1 can (15 ounces) pumpkin puree
- 2 ½ cups chicken broth
- Optional toppings: sour cream, shredded sharp cheddar cheese, roasted pumpkin seeds, avocado slices
Instructions
- Brown the Sausage: Heat olive oil in a large Dutch oven over medium heat. Add the sausage and cook until browned and cooked through. Drain on a paper towel-lined plate.
- Sauté Vegetables: In the same pot, sauté onion and bell pepper until softened. Add garlic, cumin, chili powder, cinnamon, salt, and black pepper; cook until fragrant.
- Add Ingredients: Stir in tomatoes, beans, pumpkin, broth, and cooked sausage. Bring to a boil, then simmer covered for 20 minutes.
- Adjust Seasoning: Taste and adjust salt and pepper. Serve hot with toppings.
Notes
- For a vegetarian version, omit the sausage and add extra beans or a plant-based alternative.
