Description

Pineapple Heaven Cake is a moist, flavorful dessert combining the tropical sweetness of crushed pineapple with a creamy, smooth cream cheese topping. This easy-to-make yellow cake is perfect for gatherings or as a delightful treat any day, featuring a luscious balance of textures and flavors topped with shredded coconut or crunchy pecans.

Ingredients

Scale

Cake Ingredients

  • 1 box yellow cake mix (or your favorite homemade recipe)
  • 1 can (20 oz) crushed pineapple, undrained
  • ½ cup vegetable oil
  • 4 large eggs

Topping Ingredients

  • 1 package (8 oz) cream cheese, softened
  • 1 container (8 oz) frozen whipped topping, thawed (like Cool Whip)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ½ cup shredded coconut or chopped pecans

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan, or line it with parchment paper for easy removal.
  2. Mix the Cake Batter: In a large mixing bowl, combine the cake mix, crushed pineapple including its juice, vegetable oil, and eggs. Beat with a mixer on medium speed for 2–3 minutes until smooth and well combined. Pour the batter into the prepared pan and smooth the top evenly with a spatula.
  3. Bake: Place the pan in the preheated oven and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and allow the cake to cool completely in the pan before adding the topping.
  4. Prepare the Topping: In a mixing bowl, beat together the softened cream cheese, thawed whipped topping, powdered sugar, and vanilla extract until the mixture is smooth, creamy, and well blended.
  5. Assemble: When the cake has cooled completely, evenly spread the cream cheese topping over the surface of the cake. Optionally, sprinkle shredded coconut or chopped pecans on top to add extra flavor and texture.
  6. Serve: Slice the cake into servings and serve. Refrigerate any leftovers to maintain freshness.

Notes

  • Ensure the cake is fully cooled before frosting to prevent the topping from melting.
  • For a nut-free option, omit the shredded coconut or pecans.
  • You can substitute crushed pineapple with pineapple tidbits if preferred, but ensure to use the juice as well for moisture.
  • Make sure the cream cheese is softened to avoid lumps in the topping.
  • Use parchment paper for easier cleanup and to prevent sticking.
