Instructions
- Muddle Lime and Mint: Add the lime quarters and fresh mint to the cup of a cocktail shaker. Gently muddle the lime and mint together to release the fresh citrus juice and aromatic oils from the mint leaves.
- Add Liquids: Pour in the coconut rum, pineapple juice, and lite coconut milk into the shaker with the muddled lime and mint.
- Add Ice and Shake: Add a handful of ice to the shaker. Secure the lid tightly and shake vigorously for about 10-15 seconds to thoroughly combine the ingredients and chill the mixture.
- Pour and Top Off: Strain the mixture into a serving glass filled with ice. Top off with 2 ounces of club soda to add a refreshing fizz.
