  • 1 tablespoon lite coconut milk
  • 2 ounces club soda

Instructions

  1. Muddle Lime and Mint: Add the lime quarters and fresh mint to the cup of a cocktail shaker. Gently muddle the lime and mint together to release the fresh citrus juice and aromatic oils from the mint leaves.
  2. Add Liquids: Pour in the coconut rum, pineapple juice, and lite coconut milk into the shaker with the muddled lime and mint.
