For the Sloppy Joes:
- 1 pound thinly sliced beef sirloin or ribeye
- 1 tablespoon olive oil
- 1 small onion, thinly sliced
- 1 small green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon tomato paste
- 1 teaspoon smoked paprika
- Salt and black pepper to taste

- 4 hoagie rolls or sandwich buns
- 4 slices provolone cheese
Instructions
- Heat olive oil: In a large skillet over medium-high heat, add olive oil.
- Cook beef: Brown the sliced beef for about 3-4 minutes, then set aside.
- Sauté vegetables: In the same skillet, cook onions and bell peppers until softened, about 5 minutes. Add garlic and cook for 1 minute.
- Combine ingredients: Return beef to the skillet. Stir in beef broth, Worcestershire sauce, tomato paste, smoked paprika, salt, and pepper. Simmer for 5-7 minutes until slightly thickened.
- Assemble sandwiches: Spoon the beef mixture onto hoagie rolls, top with provolone cheese slices.
- Melt cheese: Cover the skillet with a lid and heat until the cheese melts. Serve warm.
