Instructions
- Preheat the oven: Preheat the oven to 350°F and line two baking sheets with parchment paper.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Prepare wet ingredients: In a large bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla and mix until well combined.
- Combine and bake: Stir in the grated carrots, oats, and optional nuts or raisins. Gradually add the dry ingredients and mix just until combined. Drop rounded tablespoons of dough onto the prepared baking sheets. Bake for 10–12 minutes until golden.
- Cool and frost: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. If desired, prepare the cream cheese frosting by beating cream cheese and butter until smooth, then mixing in powdered sugar and vanilla. Spread or pipe frosting onto cooled cookies.
