Cookies:
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder

Filling:
- 1/2 cup chopped pecans
- 1/4 cup brown sugar
- 2 tablespoons heavy cream
- 1 tablespoon unsalted butter
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter and sugar: In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg and vanilla.
- Combine dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Form cookies: Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart. Make an indentation in the center of each ball.
- Prepare filling: In a small saucepan over medium heat, combine the pecans, brown sugar, heavy cream, and butter. Stir until melted and bubbly, about 2–3 minutes. Remove from heat and stir in the vanilla extract.
- Fill and bake: Spoon the pecan filling into the center of each cookie. Bake for 10–12 minutes or until lightly golden. Cool before transferring to a wire rack.
