Description

A deliciously moist and flavorful Peanut Butter Jelly Bread combining the classic flavors of peanut butter and jelly in a soft, swirled quick bread. Perfect for breakfast or a snack, this easy-to-make loaf offers the nostalgic taste of a PB&J sandwich in every slice.

Ingredients

Scale

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2/3 cup creamy peanut butter
  • 1 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup grape or strawberry jelly (plus more for swirling on top if desired)
  • 2 tablespoons melted butter (optional, for brushing)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly distribute the leavening and seasoning.
  3. Combine Wet Ingredients: In a separate bowl, whisk the creamy peanut butter, whole milk, large egg, and vanilla extract until the mixture is smooth and homogenous.
  4. Incorporate Wet into Dry: Pour the wet ingredients into the dry ingredients and stir gently just until combined; avoid overmixing to keep the bread tender.
  5. Layer Batter and Jelly: Spoon half of the batter into the prepared loaf pan. Dollop half of the jelly over the batter, then use a knife to gently swirl it into the mixture for a marbled effect.
  6. Repeat Layering: Spoon the remaining batter on top, followed by the remaining jelly, swirling again to create a pretty jelly swirl pattern on top of the loaf.
  7. Bake: Place the loaf in the oven and bake for 50 to 60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
  8. Cool: Allow the bread to cool in the pan for 10 minutes to set, then remove and cool completely on a wire rack to prevent sogginess.
  9. Optional Butter Brush: For added flavor and a shiny crust, brush the top of the warm loaf with melted butter before serving.

Notes

  • Use your favorite jelly or jam flavor; mixing different flavors can add an interesting twist.
  • This bread is especially tasty toasted with extra peanut butter spread on top.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week to maintain freshness.
