Dough:
- 1 cup unsalted butter (softened)
- 1½ cups granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
Filling:
- 2 cups diced fresh or drained canned peaches
- 8 ounces cream cheese (softened)
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Prepare the Dough: Cream together butter and granulated sugar. Beat in the egg and vanilla. Mix in flour, baking powder, and salt to form a soft dough. Press two-thirds of the dough into the baking dish.
- Make the Filling: Beat cream cheese with powdered sugar, vanilla, and milk until smooth. Spread over dough. Top with peaches. Crumble remaining dough over the peaches.
- Bake: Bake for 35–40 minutes until golden. Cool before slicing into bars.
