Filling:

  • 2 cups diced fresh or drained canned peaches
  • 8 ounces cream cheese (softened)
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the Dough: Cream together butter and granulated sugar. Beat in the egg and vanilla. Mix in flour, baking powder, and salt to form a soft dough. Press two-thirds of the dough into the baking dish.
  3. Make the Filling: Beat cream cheese with powdered sugar, vanilla, and milk until smooth. Spread over dough. Top with peaches. Crumble remaining dough over the peaches.
  4. Bake: Bake for 35–40 minutes until golden. Cool before slicing into bars.
