Chicken Pasta:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 3 cups chicken broth
- 2 cups milk
- 12 oz uncooked pasta (penne, rotini, or shells)
- 1 can (10 oz) diced tomatoes with green chilies (optional)
- 2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons cream cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Cook Chicken: Heat olive oil in a large skillet, add chicken, salt, pepper, and Italian seasoning. Cook until browned.
- Sauté Onion and Garlic: Add diced onion and garlic, sauté until fragrant.
- Add Ingredients: Pour in broth, milk, pasta, and tomatoes. Bring to a boil.
- Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
- Add Cheese: Stir in cheddar, Parmesan, and cream cheese until creamy.
- Rest and Serve: Let it rest for a few minutes to thicken. Garnish with parsley.
Notes
- You can use mozzarella or pepper jack instead of cheddar.
- Leftover rotisserie chicken works well in this recipe.
