Chicken Pasta:

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 3 cups chicken broth
  • 2 cups milk
  • 12 oz uncooked pasta (penne, rotini, or shells)
  • 1 can (10 oz) diced tomatoes with green chilies (optional)
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons cream cheese (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook Chicken: Heat olive oil in a large skillet, add chicken, salt, pepper, and Italian seasoning. Cook until browned.
  2. Sauté Onion and Garlic: Add diced onion and garlic, sauté until fragrant.
  3. Add Ingredients: Pour in broth, milk, pasta, and tomatoes. Bring to a boil.
  4. Simmer: Reduce heat, cover, and simmer for 12–15 minutes until pasta is tender.
  5. Add Cheese: Stir in cheddar, Parmesan, and cream cheese until creamy.
  6. Rest and Serve: Let it rest for a few minutes to thicken. Garnish with parsley.

Notes

  • You can use mozzarella or pepper jack instead of cheddar.
  • Leftover rotisserie chicken works well in this recipe.
